1 lb peeled deveined large shrimp
1/2 tsp salt
1/4 tsp pepper
1 tbsp olive oil
3 garlic cloves crushed
1 tbsp grated peeled fresh ginger
2 cups cut up peeled and cored pineapple
1 large red bell pepper seeded and sliced
3 scalloins cut into 1 inch pieces
2 tsp lime juice
1. Sprinkle the shrimp with salt and pepper. Heathalf of the oil in a large nonstick skillet over medium high heat. Add shrimp and cook until opaque in the center, about 1 1/2 minutes on each side. Transfer to a plate and set aside.
2. Heat remaining oil in skillet and add garlic and giner, cook stirring constantly until fragrant. (About 30 seconds) Add pineapple and cook stirring ocassionally until softened, about 2 minutes. Add bell pepper and cook until crisp tender and the pineapple is lightly browned, 3- 4 minutes. Add the shrimp, scallions and limes juice. Cook until heated through.
Serve over brown rice.
