This is a huge family favorite that we make often while camping.
1 lbs Boneless Skinless Chicken Breasts
1 Onion thinly sliced
1 Red, Green Or Yellow Pepper thinly sliced
2 tsp Chili Powder
1/2 tsp Cumin
1/2 tsp Salt
1/2 can Chicken broth or enough to cover chicken
2 Tbsp Lime Juice
Warm Flour Tortillas
Cheddar Cheese grated
Lettuce and Tomato as desired
Cut chicken into 1/2 strips. Place in crockpot. Top with onion, bell pepper. In a small bowl combine chili powder, cumin, salt, lime juice and broth. Pour over chicken.
Cover and cook on low 8 hours or until chicken is tender.
Serve with tortillas, cheese, sour cream and lettuce
